I cooked all Grilled, Steam, and Broiled orders from scratch. i timed all order in sync with all the fried seafood orders. Plated all orders and usually wrapped until the fried seafood orders were ready. all orders were called out before tickets were sent in. after a while i usually memorized the orders as i had been there long enough to memorize the menu. Kept all sides/side orders at proper holding temperature's. Cook extra sides/side orders as the first ones ran out. Always made sure their was not much leftover for waste or cooled down remaining sides to proper temperature for overnight storage. Very good at multi-tasking as i was cooking orders. Can self time pretty much anything in my head, kind of like a internal clock. Did set up before we opened, Made tea, salads, and prepare sides for cooking. Very fast leaner and can learn by watching as I work at the same time. Broke down my equipment before closing and cleaned my stations and colors. Wrapped and dated all ,left-overs for next day use and took out next days supplies. Watched over the kitchen staff for clean up and checked to make sure job was done properly. Cleaned ovens and fryers every night and strained grease for next day use. Helped on Thursdays to put up and rotate stock. Took weekly inventory and nightly inventory. Usually helped on the monthly inventory. Worked in the morning time when needed to help out if needed. Made slaw, cocktail sauce, prepare to-go slaw and cocktail sauce. Made to-go applesauce etc.
